8 whole chicken wings, cut up
1 T baking powder (NOT baking soda)
1/2 t salt
dry rub or sauce
Cutting the Wings
Follow these instructions for step by step photos on how to cut the wings.
Cut all the chicken wings.
Preheat oven to 250.
Place the cut wings in a large bowl. Toss with baking powder and salt.
Place wings on a rack in a single layer and cook for 30 minutes
Increase heat to 425. Heat until they are brown and crispy, about 40 minutes.
Let wings rest for about 5 minutes. Toss with your desired sauce or rub.
